Preparing Ravioli Dough from Scratch

The first step to delicious ravioli is creating the pasta dough, which involves a combination of eggs, flour, and salt. You can knead the dough by hand or run it through a food processor. Next, lightly flour the dough, roll it into thin 12-inch squares, and further divide these sections into 2-inch strips.

Brush the strips with an egg mixture, and place a teaspoon of filling at 1-inch intervals. It is important to leave an even half-inch of space at each border. Once the filling mounds are in place, set a second strip on top, with the egg-brushed side facing down. Press the dough between the mounds of filling, and cut the individual raviolis. The filling can be any combination of meat, cheese, or vegetables and is where the true art of ravioli comes to the fore.
